Sauerkraut Soup // Kapuśniak


Cook 2 large peeled potatoes separately as the acid in the kraut may prevent them from going soft if cooked together. Then add them to the soup made up of 500g sauerkraut, 2 cups water, 2 bay leaves, 3 all spice seeds and 100g diced bacon, simmer together for 30 minutes. Serves 4.

 Sauerkraut Kiwi Smash (Smoothie)

This is probably the most novel way to use pickled cabbage. Stop cringing and listen up. Mixed into a kiwi smoothie, sauerkraut provides a delicious, tangy and easy way to convince non-sauerkraut fans to have some of the probiotic goodness raw.


In a high-powered blender, blend together for 30-60 seconds: ⅓ cup loosely packed sauerkraut, ½ cup tightly packed iceberg lettuce, ½ cup loosely packed kale leaves, 1 kiwifruit, peeled, ¼ orange, peeled, 1 teaspoon macadamia oil, 1½ cups chilled filtered water and ½ cup ice cubes. Serves 1-2.

4. Distribute the sauerkraut over the hummus on each slice.
5. Distribute the avocado slices over the sauerkraut.
6. For the remaining 4 slices of bread, spread hummus on the side without butter and place hummus side down on the avocado slices.
7. Bake in the oven for 6-8 minutes, then flip the sandwiches and bake about 6 minutes more, until the sandwiches are golden brown and crispy. (Alternatively, you can grill them on the stove top on a griddle or in a skillet)

Grilled Sauerkraut Avocado Sandwich

8 slices pumpernickel bread
vegan buttery spread (or regular butter)
1 cup hummus, roasted garlic flavor, divided
1 cup of Hamptons Brine sauerkraut, drained, and liquid squeezed out
1 avocado, peeled and sliced lengthwise into about 16 pieces (you can leave out this ingredient if you want to lower the fat content of the sandwich, and it will still be really delicious!)

1. Preheat oven to 450 degrees F (230 degrees C).
2. Spread butter on one side of each of the 8 slices of bread, and place 4 of them them butter side down on a baking sheet.
3. Take about half of the hummus and distribute over the 4 slices of bread.


1 cup Sauerkraut Kvass

1 ripe avocado

1 medium tomato

1 Tablespoon onions, chopped

1 teaspoon garlic, chopped

Black pepper to taste

In a blender, blend all ingredients until very smooth. Add more Kvass if necessary to reach desired consistency


16 oz Spicy Sauerkraut, drained and finely chopped

1 cup sweet onions, chopped

​1/4 cup hot red peppers, chopped

1/4 cup cilantro, chopped

1 teaspoon garlic, chopped

1 Tablespoon olive oil

Mix all the ingredients and refrigerate for a few hours


16 oz sauerkraut, drained

​1 finely sliced or grated apple

1 cup chopped green onions

1/4 cup chopped dill

1/4 cup chopped parsley

1 Tablespoon unfiltered sunflower oil

Black pepper to taste

Mix all the ingredients and refrigerate for a few hours for best taste
